Fennel is the white bulb of the plant. It is related to parsley, carrots, dill and coriander. The bulb, seeds and leaves of the plant are all used. It has a distinct aniseed taste and the bulb is often be served raw in salads. When boiled or baked its texture is much softer and the flavour is also milder.
