Barley is one of the earliest cultivated grains. It contains less gluten that wheat and is unsuitable for bread-making unless fortified with wheat. It is often used in soups and stew and sometimes as a replacement for porridge. It is also be used in brewing. In Australia when de-hulled it is called pearl barley while unpearled barley still retains its outer husk.
