Cream of tartar or potassium bitartrate also called potassium hydrogen tartrate is formed when tartaric acid is partially neutralised with potassium hydroxide. Tartaric acid is a white crystal deposited during winemaking that is purified and powdered to make Cream of Tartar. It is an ingredient in baking powder and used to stabilise egg whites during the manufacture of meringue and other products.
