Peel
Peel is the outer layer of fruit (e.g. citrus, apples, pineapple) or vegetables (e.g. potatoes, carrots, celery root). It is removed for either to make the ingredient edible (pineapple) or for appearance (carrots). Citrus peel is used finely peeled or zested as a flavouring agent. It is also preserved or candied and used as a garnish.
