Cornflour

Cornflour is the finely powdered starch from corn and also from wheat. It is often used to thicken foods. Often used in Chinese food where it is also used as a marinade to break down the fibres of meat. It can be mixed with icing sugar or salt to stop them stop them absorbing water. It can be used, either mixed with wheat flour or alone, to make very short pastry.
