A hard cheese made from cow.s milk - a mixture of fresh full fat and day old skimmed. It comes from Emilia‑Romagna and Lombardy. It is one of the essential flavouring ingredients of Italian food. Being hign in naturally occurring MSG (as is mother's milk) it acts as a flour enhancer.
It is very similar to but more expensive than, Grana Padana which is made in the same way but from a slightly different cow's milk combination.
