Mosto Cotto

Mosto Cotto is reduced unfermented crushed grapes. The crushed grapes are cooked until reduced to about 50% of their volume. Like balsamic vinegar it is better aged. It comes from the Abruzzo region of Italy and is used to enhance the flavour of braised meat, some vegetable dishes and even desserts. It can also be drizzled over fresh ricotta.
