Essence
Essences are made by extracting the flavour element from an item. Sometimes this is a distillate. Others are made by dissolving the ingredients essential oils in alcohol or some other solvent and reducing the resultant liquor. They are very intense in flavour and should be used sparingly.
There are also imitation essences where the flavour is created in a laboratory.
Common essences are: vanilla, lemon, almond, etc.
